Things you're not taking into account:

Fighter pilots are very observant and cognizant of their environment so the F-15 pilot likely picked up the Russian pilot via his peripheral vision;
The WISO (the guy in back) on the F-15 may have also spotted the Su-27
They were very close to what was apparently a Russian aircraft so they were expecting an encounter
And YES, fighter jets DO have rear-view/side-view mirrors!
