Cell phone? That's a bit much.
I still have a few old yahoo accounts with only three letters for the password before they started cranking down.

what's spooky is that a year ago I signed up for 5 gmail accounts with similarity's to my name
just to preserve them if I ever want to use them in the future for my business
one of the accounts that I have never used receives approximately
30 spam messages a day
I've never given them my cell number
and I'm pretty sure I could sign up there again for another account
without divulging that info

I made a new Gmail account 2 days ago and it did not ask for my cell phone number or any other phone number.
I just checked, it's still the same... does not ask for you cellphone number.
Are you sure you were on the right site? http://mail.google.com
It wouldn't make sense to do that because millions of people who use gmail, or who would like to sign up for it, do not have a cell phone.
Sounds like you might have landed on to a scam site impersonating gmail.

After entering my desired address, password etc...
Here's what gmail requires from me...

Try this. I've read that this has worked for others...
Go to Google.com and click on Sign in at the top right corner.
Then, click on Create An Account Now. Create a new Google account (Not Gmail) with any email (hotmail, yahoo, etc.)
Then, while you are signed in to your new google account, go to Gmail and
sign in to Gmail with the email and password from Step #2.
Create your Gmail account.
