When I think of canned foods, I automatically assume that everything must be pickled in vineger, etc. I don't know the first thing about canning, but I am planning on taking a course at a local college.

In the meatime, I'm just wondering, can you can fruits?
Specifically Banana. Can it be canned and still keep the taste/texture?

I originally consider just buying the equipment and learning from books, but then I read some stuff that got pretty heavy into the dangers of botulism, and it scared me into thinking that I couldn't learn it at home on my own.

What do you think? I mean, I learn from books all the time, adn I'm comfortable with self-instruction, but I would not want to kill my kids and wife and myself with botulism! lol. Just sayin....
