View Full Version : Juicy Stuffed Chicken Breast

Required ingredients:
- chicken breasts
- soft cheese (I like goat cheese, but blue cheese, gorgonzola are good too)
- sliced cheese (I like horseradish cheddar, but any sliced cheese would do)
- can of stewed tomatoes
- fresh leafy spinach
The rest is optional, according to your taste . . .
- bacon
- dried basil or fresh, chopped
- fresh garlic, chopped
- salt/pepper

Preheat oven to 375

Cook 8 strips of bacon to your desired crispiness

Grease a glass baking pan (I use grapeseed oil, but butter, Pam, etc. is fine)

Put a layer of spinach onto the greased baking pan, and pour stewed tomatoes over the spinach.

Pound chicken breasts until they are flat.

Mix soft cheese with salt, pepper, garlic, basil and crumbled or chopped bacon.

Spread soft cheese mixture onto chicken breasts, fold over.

Place stuffed chicken breasts onto layer of spinach/stewed tomatoes in baking pan.

Layer sliced cheese on top of chicken breasts.

Bake for 35 minutes.

(I don't measure anything when I am cooking . . . but any amounts should do just fine).

Enjoy! It's what I am having for dinner tonight.

That's the beauty of this, it's a one course meal, done mostly in the oven. It's a dish you can prepare and walk away from.

However, if you felt you really would like to have some sides, here are a few suggestions:
- roasted or baked potatoes
- pasta with a light/mild pesto, oil or butter
- steamed broccoli, squash
- rice

I would say any vegetable or side with simple flavor would go with this recipe, because the main course has complex flavors.

Boar's Head makes it, and it's at my grocery's deli counter. It's fantastic if you like your cheese to bite you back just a little. ;D

You lucky lucky lady! Boar's Head is like the Holy Grail to us. And of course, I haven't seen it sold anywhere around here. When we lived in L.A.,I would drive waaay out of my way to get some.

This recipe sounds really good! Thanks for sharing! I'll be trying it sometime soon!
