I notice the symbols change every time but I still don't get it:

C'mon... you could be picking any combination at any given time, and you aren't inputting anything, so how the hell does that work???

No matter what number you pick, the result will be a member of the same sequence. Look at the chart and the same symbol is associated with each member. Thye just change which symbol it is each round to create the appearance of guessing the correct answer. The sequence is 0, 9, 18, 27, 36, 45...

Mamboni's got it. The number you end up with will always be a multiple of 9. We tried the same operation with some three digit numbers, and it appears to work with those as well.

The can't possibly know which two numbers you choose, so the only symbol they can pick in advance will always be the same (which is why they change the symbols each round).
The outcome of the mathematical equation will always result in the same variable, hence they can seed the cart with the chosen symbol for each round covering all the outcomes.
