It was an intentional firing for a movie scene, so they removed the canopy in order to keep it from getting damaged. I have no idea why they did it this once at zero-zero.

Canopy was also removed prior to flight and ejection for the movie scene (I guess they don't have convincing CGI in Russia), note position of elevators -

With the potential for lifelong back injury, I cannot fathom why anyone would volunteer to intentionally take a ride on a pyrotechnic propelled ejection seat. Perhaps it's just more Russian zaniness.
