Such a simple idea! Throw a tiny dessicant pack in the there and they'd make a pretty convenient air tight storage unit. I'm going to have to start saving 2 liter bottles! Seems more covenient that dranging out a 5 pound bucket every time you want a couple servings of rice.

I started saving the new cat litter packaging. The litter used to come in nice big plastic buckets with lids:

I saved a few dozen of these over the years. So I was really disappointed when they changed the packaging to this plastic bag format:

But it turns out this new package is pretty sweet. The bag itself is extremely thick and sturdy. The way it's folded over the back makes for a nice tall bag once the litter is gone. It has a heavy-duty ziplock closure, and a plastic handle built in.
I tried it with several gallons of water and it made for an easy carry. It folds up into a small, light, flat package. You could make usable rain gear out of a few of these + some duct tape, or spread it open to catch and collect morning dew. Paint it black and make a solar shower, etc.
I'll be putting several of these in my BoB and other preps.

I only like to use HDPE- high density polyethylene for plastic storage. I try to avoid any plastic that can leach BPS, lead, antimony- or other toxins.
At tag sales, I have found mason jars real cheap. I have more than I will need. Of course, the glass can break, so you would need to store them more carefully. Also- the jars are able to seal and take oxygen absorbers. I also save glass bottles- like snapple or other drinks.
Look at those plastic bottles as a short term/ emergency storage. And keep them cool.
The old luggage idea is a good one.

The LDS recommends PET bottles (http://providentliving.org/pfw/multimedia/files/pfw/pdf/96277_PETEBottleStorageInstructions_v4_pdf.pdf) with oxygen absorbers. The method in the OP is the use of PET bottles. The LDS also recommend foil pouches (http://providentliving.org/pfw/multimedia/files/pfw/pdf/92987_FoilPouchStorageInstructionsv3_pdf.pdf).They claim that 5 gal. buckets do not work with oxygen absorbers, but offer a dry ice treatment (http://providentliving.org/pfw/multimedia/files/pfw/pdf/96278_PlasticBucketStorageInstructions_v4_pdf.pdf) to destroy any biological hazards with 5 gal. buckets.. Their biggest recommendation is #10 cans (http://providentliving.org/pfw/multimedia/files/pfw/pdf/105529_FHSNumberTenCansDetail_pdf.pdf).
I don't agree with their theology, but I see them as experts in food storage.
For PET look for this symbol (PET or PETE):
