I got my first canned goods of the season done yesterday.

14 quarts of Green Beans!

These are a bush variety, no string. We pinched the stem and the butt end off, snapped them and canned. 25 minutes @ 15lbs of pressure. Ball book called for 10lbs, but I only have access to a 15lb jiggler (weight that lets out the steam to regulate pressure) so that is what they got.

I pressed as many beans as possible into the jars, pressing them down to get rid of air space. I put 1tsp of salt per jar and sealed. Easy peasy. Green beans have to be one of the easiest things to can. Also, this was only the first picking off the plants and it is usually smaller then the second. I am guessing we will get about 25-30 qts from the second picking.

Then we can pull the plants and do it all again in a second planting as green beans only need 45 days to mature.

Probably worth more in the near future as well.

Looks Great...but isn't a teaspoon of salt a bit too much for a quart jar?

Use celtic or sea salt.....is good for you..........sodium chloride salt........bad for you

Teaspoon in a quart isnt all the much. Most of the liquid gets thrown out anyways. Just requires pepper for seasoning too after opening since the salt is already added. I like salt though so you can season anyway you like. Salt is optional per the ball canning book. Why not stick it in now whilenit is easily accessable instead of adding what you like later? It migt not be as easy to find later...

It's not the first canning of the season. But it was the biggest so far. Mouse does most the work. I just help when he needs extra hands.

This weekend I plan to make several quarts of chutney (peaches and peppers) and a few gallons of tomato sauce (roasted). If I can find some sales at the local markets I may make other goodies. I love canning. Love seeing the pics of others canning adventures too!
