Who needs expensive copper or stainless steel egg or pancake ring molds when you can use pretty, bright bell peppers?

There’s no recipe, really, just three steps: 1) Cut bell peppers into 1/2 inch rings; 2) Place in a non-stick lightly oiled skillet; and 3) Crack an egg in the middle of each ring and cover and cook over low heat until done. If you like your yolks runny, just cook over low heat until whites are done. If you like your yolks firm, break the yolks and then cook over low heat until both whites and yolks are firm.

I went with a standard omlette this morning. It turned out so nice I had to take a photo. Two backyard eggs, grilled garlic with red and green bells, fresh basil and a tomato, all glued together with goat cheese and sea salt. Then topped with a avocado, tomatillo and lime salsa.

My brother raises the chickens. I have a worm farm (a tub) for my garden and trade worms for eggs and chicken shit. The veggies are from the weekend farmer's market. Peppers, chiles and basil are always in my garden, and in my recipies which are a mix of Mexican and Thai. If I'd had mushrooms on hand, they would've joined the garlic and peppers in the cast iron skillet.

I tried the OP method of eggs cooked in bell pepper “molds”, and it didn’t work out very well. The eggs leaked out from underneath the peppers, and the circumference of the pepper wasn’t large enough to contain the egg, so it spilled out over the top also.

It's not my fault he used a small pepper and/or a too-large egg. Maybe we need to get the engineers (http://gold-silver.us/forum/showthread.php?59626-Engineers) in here for troubleshooting?

I thought about that too, and I think the bell pepper needs to be of humongus (sp?) proportions, or it needs to be cut very thick slices...

As long as it holds the volume of the egg... An egg is about 2 oz's or 60 grams, assuming a density of around one g/cm3. It makes volume about 60 cm3 divide with 1.252 cm (1/2 "), and the inside area of the bell pepper needs to be aprox. 48 cm2, if it was square shaped that would mean a square with a 7 cm side or 3", but bell peppers are not square, so add another inch, plus half an inch for the meat of the bell pepper rim, that means a bell pepper with a diameter of between 4-5", which is humongous (at least by old world standards)...

What an important subject to dissect... ;D

I tried this yesterday for breakfast.

I used two orange bell peppers and two extra-large eggs. The biggest pepper slice from the middle had around a 12" circumference, and it held the egg fine. The egg white spilled out of the smaller one, but unlike Madfranks' experience it went over the top and into the pan rather than leaking out of the bottom of the pepper ring. I think this means you need to let the peppers cook a bit before adding the eggs, and/or you didn't use enough fat (I used a mixture of refined coconut oil and ghee). I added a pat of butter to each egg along with garlic salt and black pepper, and cooked some bacon and it went perfectly with my cup of coffee and cream.

Sure but I've done that a bazillion times already. ;-)

ETA: Since my diet is mostly meat, vegetables and fat, I like to get ideas on how to mix it up a bit.

I tried the OP recipe when my folks visited a couple weeks ago, and it didn't bother me that an egg white leaked out a little from the bottom--they probably only did that because I was trying to flip 'em IMO. Great recipe! Thanks for posting!

I was going to pick up some bell peppers today, but I was to cheap, little tiny ones 2 for $ 3.00. I thought that was high, and I don't like bell peppers that much! So I just had eggs.
