Interesting blog. I still think that two common mistake are: 1) Failure to organize and rotate, and 2) Oversupply of certain perishable items. I saw a reference to someone who bought a case of mayonnaise on sale. Assuming it's twelve 16-oz jars, how long before that 12th jar gets consumed? I know the expiration date on food is overly conservative, but I have no interest in eating mayo that is a year past its date.

at least on the mayo front, it can easily be made from materials that are much more shelf stable individualy. Egg's, oil and acid is the base to any mayonnaise.
This is where i see a lot of people go wrong. Stocking up on things like salad dressings, spaghetti (usualy made with eggs), crackers, etc. Try to find ways to make all that stuff, as most of the ingredients are staples your going to have anyways.
Eggs, Semolina Flour (which stores muhc longer than regular flour, but you can use AP flour too) salt and water make the base of spaghetti. All of those ingredients are stuff ANY half serious prepper is going to have as they are all staples for almost every household. Eggs might be powered, but so be it. If you've got chickens, even better.
Salad dressing needs be nothing more than herbs (grown in a small herb garden) Oil (anytime, but Olive is most common, any oil works though, even lard) and of course a little water and vinegar. Want creamy dressing like ranch. Buttermilk (soured milk) is the base for most of those. Can be made from powdered milk, too.
anyways, Im preaching to the choir, just though I'd throw it out there.
