are they edible? we don't eat carp round here..... not yet anyway. Mostly grind em up and use em as fertiliser. Very muddy fish and a pest.

It seems it is edible, even considered a delicacy, in many parts of the world, but it s unedible in USA.

Cut up and pickled it is pretty good. Out spear fishing on the ice one time we brought back around 100 lbs of carp and donated them to the neighbor.

Pickling dissolves the bones otherwise it is hard to get around them.
