So...apparently I was poor when I was a kid. I called my mother for tonight's receipt. We chatted a bit and I thanked her. I started reviewing the ingredients....yep, Poor.

Sometimes I wish I could be a kid again. I had no idea I was poor. Poor people are always sad, asking for money, and apparently sitting in my fathers chair and calling me son. We were always pretty happy as a family which is why I'm surprised to find out I was poor. But, after reviewing tonight dinner, there's no doubt.


Stainless Steel cookware (Thanks Shami) ;)
1 whole bone in chicken breast halved. (Original recipe called for wings and thighs...told you)
1 Sweet Onion
2 cups De Cecco Acini di Pepe
2 tbsp spoons Hungarian Paprika
3 chicken bullion cubes
4 tbsp sour cream
1 tbsp spoon corn starch

Halve the chicken breast and set aside.
Crack open Miller Light and thank God it isn't Genny Cream Ale or Natty Boh.
Dissolve 2 chicken bullion cubes in 1.5 cup of Hot water.
Melt 2 tbsp spoons of butter in pan. Add 1 diced sweet onion. Sprinkle with 1 tbsp of paprika. Sauté Onions for 5 minutes.
Lightly season with salt and pepper to taste. Place into pan and brown chicken. Skin side down first. Once browned, remove chicken and set aside. Remove the skin and place chicken back in the pan. Pour chicken bullion stock into pan and simmer for 1 hour.

Almost forgot.

1 loaf of Garlic Tuscan Bread. I really wish you could smells this bread!

In a seperate pan, brown 2 cups of De Cecco Acini di Pepe using 2 tbsp butter.
Once brown, add 1.5 cups of chicken bullion water. Cover and continue to cook until tender.

Remove chicken from pan and whisk 4 tbsp of sour cream into the juices. Mix 1 tbsp of cornstarch in 1 cup cold water. Pour into the pan that held the chicken and whisk until boil. Add a little more paprika. Reduce heat to simmer and return chicken to pan. After 10 minutes, remove pan from heat.

Thanks undgrd. What about the ingredients says "poor" to you?

Within the past 5 years or so I have found out that my family was poor when I was a kid, too. I never thought about it when I was younger. I never thought about what other people had compared to what we had. There was food on the table and a roof over our heads. We didn't have many toys, but we were really into sports anyway, even if it was just simple street kickball. My dad told me sometime within the past year that he worked three jobs for most of the time when I was a kid. I never knew that. I can't imagine where he found time to sleep.

Im not really getting the "poor" vibe either, and we grew up pretty freaking poor as well.


Believe it or not, some of the best food cooked is from "Poor" kitchens. Because of the NEED to make bad, spoiled or tough foods edible, poor kitchens are responsible for the vast majority of the good food in the world.

The thighs and wings are were the cheapests parts of the bird. I was half joking around while writing. I guess I was just thinking about how things around me where when I was a kid eating this dish. Wasn't meant to be used as a derogatory term.

When I was six, seven, and eight, living in married student housing in Seattle, we had our routine. We would get off school, walk home and get into our fishing clothes, and go to Union Bay, on Union Lake. We would catch enough trout for dinner, pick a bunch of blackberries when they were in season, and eat a meal fit for royalty. Mom would cook that day's trout and bring out a pie or cobbler from the the previous day's blackberries. We had a lot of trout and blackberries in our diets. It was a lot of years later that we found out that we were poor, dad had three jobs to work through college while supporting us five kids, and that often there wasn't a back-up plan for dinner. Trout and blackberries are still some of my favorites.
