Tonight we're having smoked pork loin.


I had to prepare the rub last night and let it sit. It turned out pretty nice.

Dry Rub
1/2 cup packed light brown sugar
6 tbsp smoked paprika
2 tbsp chili powder
2 tbsp cayenne pepper
4 tsp granulated garlic
4 tsp granulated onion
4 tsp dry mustard
2 tsp kosher salt
2 tsp cracked black pepper


In a small bowl mix all the spices together. This makes over a cup of rub, so you can use some now and save some for later. Store the rub in an airtight container, such as a jar or resealable bag.

Next: Chips

You have to soak them in water for about an hour. If you don't, they're burn up pretty fast and won't smolder.

I like to take about 1/3 of the chips and wrap them in foil after soaking. Then I'll poke a few small holes in the foil. I will toss this right onto the coals once they're hot.

Damn that looks good where do you live? Shlurp! What's the benefit of Kosher salt, vs sea salt?

Kosher salt is in flake form and sea salt is usually more of a sand grain like table salt, but finer. Both are equally as good IF you get premium sea salt. I try to avoid sea salt these days since a lot of it is fake, and/or has fillers making it no longer "sea salt". Kosher salt is Jew Approved so you know you're getting quality since it's made for the Master race.

The best salt is himalayan salt, quality and tastewise. That's the pink stuff.

Just about 6 1/2 hours. BBQ sauce is on. Basically, apply sauce to 1 side. Let sit for about 10 minutes, flip and apply more sauce. Remove from heat and let it rest for about 10 minutes. Apply a thin coat of sauce if you want.

The salt they put down on the roads in the winter around here is pink...doubt it's the same stuff though

Doesn't matter, wipe it off the road before it desolves, pay a Rabbi to bless it and you can sell it to Israel as Kosher Himalaya Salt for a huge profit. ;D
