Have been dehydrating pears and apples like crazy lately and just did a round of 24 quarts of pear canning. Beats me why more people don't take up canning their own. You use glass jars so no plastic or metal contamination and you get to control what goes into the batch.

By the way ... dehydrated pears are really sweet. Nice snack.

i tried canning coffee and broccoli. both 1 1/2 hours in boiling water. and they still spoiled. must not have had a good seal.

i guess you have to take the jars out and wait for that popping sound.

You need acid to process non-acidic food in home canning to keep it from spoiling.
Use real lemon juice.....not the stuff you can buy in container....use real lemons.
Been canning most of my life and don't get much spoiling....if anything I have to throw some away from not eating it soon enough.

Take the jars out and immediately set them upside down....for some reason the ratio of a good seal is higher.
I lose about 1 jar out of 75-100 from not sealing properly.....and that just turns out to be lunch or dinner.

Canning applesauce today and tomorrow.

Ever try dry canning?
Put the dry coffee in the jar and set in the oven rather than under water bath.
I've done this with spices.
Google "dry canning".

I've tried them. They are OK, small and a bit soft, but they taste decent. Not as good as normal hotdogs however.

The canned bacon though, is fantastic, imo. I made this bacon for some coworkers and they liked it a lot, before I told them it was from a can...

I like knowing I will be eating bacon in emergencies. Bacon is my comfort food.
