Anyone have a favorite squirrel recipe you'd like to recommend?

I was thinking of this recipe, bacon wrapped squirrel. This will be my first time cooking and eating squirrels.

Look for rabbit recipes and substitute it. I've never cooked squirrel sadly so can't comment.

These little guys are small. I've got 3 of them and that should make only one meal, probably the same amount of meat as one small bunny. I've read you can wrap the whole squirrel in bacon and it's supposed to come out pretty tasty. I think I'll do that tomorrow, instead of turkey on t-day I'll try squirrel.

Well if you do it that way cook it with a bit red wine like Merlot. It helps balance out the gamey flavor and makes the meat more tender.

With the whole squirrel, or do I cut off the meat, backstap, etc before making the stew? I've been told all the little bones take away from the enjoyment of the meal, with a stew.

Basically, I've got 3 fresh squirrels in the freezer. I shot the little bastards, so feel obligated to eat them at least.

Done it both ways, whole and cutup, both are good!

Had a friend that cooked the head also for the brains, I prefer cutting them into chunks!

Rifle or shotgun?

Hate digging pellets out and missing one!

Rifle or shotgun?

Rifle, Ruger 10/22. I'll admit, squirrel hunting is a kick in the pants. They can be tough to get, they really don't like being shot at. All in all, a great learning experience and good skills for survival. I hope to go for rabbits in the near future.

I dont know Hitch ..... from what I have learned they might give you some kind of weird disease unless you talk to a old timer who has knowledge about it .

I have friends who eat squirrel and like it. They only cook the hind quarters. Not much meat on them. Zap is right, they can carry disease, so cook well. I've gone out to hunt them, (there are a lot around here) but I never had the heart to shoot the little bastards because they are so small. Nothing wrong with shooting and eating them, I am just a whimp.

we used to use the rabbits we shot as pet food. Skin, gut, quarter then boil with rice and some vegetables. Dogs used to love it.

I've wondered about the wild ones. Not really sure I'd want to eat a wild one from around here. A lot of people eat rabbit although I think it's usually ones raised for human consumption.
