That leaves me with questions about Summer Sausage, a staple of my diet -

* How long will it keep @ room temp ? (Depends on the definition of 'keep', I guess.)

* What are the ingredients ? (When I butchered a cow 2 years ago, it was a prolapsed cow, and butchering around the expelled uterus gave me lots of time to think about sausage ingredients.) Specifically, what organs do Summer Sausages contain ?

I have some that's over three year old and it's as good as the day it was made ... I also make deer jerky . I leave a pack are two in my truck just in case there a Final Warning

You have to check with the maker. The shelf-life of summer sausage depends on the process used and how well it was made.

Traditionally it was made in the early winter when hunting and butchering took place. Then was put by for eating in the summer. Through the winter meat (http://rd.bizrate.com/r/4646954585?af_assettype_id=12&af_placement_id=1&af_creative_id=2932&rf=af1&af_id=[PUBLISHER_ID]) could be kept cold easily and sausage was put back for times when cold was not available for keeping other types of meat. So this sausage was kept cold through the winter and then had several spring/summer months in a cold cellar before it was used. After the flavor diminished toward the end of summer it was still used but was cooked before eating to make it more appealing.

SO, if it's well made it could potentially be kept for a full year without refrigerating in a constant environment (cold cellar or basement in the dark) and still be quite tasty, safe, and appealing to look at.

But many commercial grade ones labeled 'summer sausage' these days are not preserved the same way and also add cheeses and such into them which significantly lessens the shelf life. Best place to get it is from the amish who still use the old ways or from an established seller with a suitable shelf-stable date marked. Actually I have.
I bought summer sausage from Costco, ate it about two months ago.
The best by date was 2008, and I am still here with no ill effects. I didn't notice any difference in the taste.
It was the big honkin' roll that does not need a fridge until opened.
I had it stored in my food prep room in my shop. The temps there range from 40 degrees in the winter to about 60 in the summer.

Cheer up Brew. Think positive, I believe we'll get a collapse within 5 years, but I think positive by nature. Thinking 20 years is a downer and not good for the health.
