I have messed with many knifes and knife steels over the long years and personally I have came to a conclusion that carbon steel knifes are better!

Stainless steel knifes are hard to sharpen and in general dull quickly, their only saving grace is they do not in general rust.

Carbon steel knifes depending on the carbon content, are easier to sharpen and do hold their edges longer, but the down side is they do need care and can not be taken for granted like ss knifes.

Carbon steel knifes need to be cleaned and kept oiled and not ignored, nor left in a leather sheath or they will rust, but they do sharpen to a much finer edge that is much easier to maintain as long as they are kept clean and oiled or have a good protective patina.

With all my hi carbon steel knifes I apply a hot vinegar treatment to give them a protective black patina that helps protect and keep the rust under control and besides that they look great!

Now as I put my flame suit on I will say most all ss bladed knifes suck compared to a good hi carbon steel alloy. SS is good for they that are lazy and just want a knife that looks good but will not take the time to do proper maintenance.

Added videos on vinegar patina and another twist to make a faux Damascus finish.

They work and do help protect the steel from rust, but still does not beat a good cleaning and oiling.

I don't like the new stainless steel knives at all. I have all my father's carbon steel knives. They are much easier to sharpen and hold an edge much longer than these new knives.

Nothing beats high carbon steel for sharpness and holding an edge
