I gave up on the "healthy fats" like polyunsaturated and homegenozed vegetable fats (I might mean hydrogenated) a few years ago now and went back to saturated. My main motivator was the explosion of the use of canola over other oils. I think sunflower, olive and peanut are ok oils to use but things labelled vegetable or blended oils are a no go area. Also use regular butter for pan fryng. I think it depends more on if its processed and how.
Having said that, substitution of oils is rampant so its still difficult to guarantee that the oil you are consuming is not adulterated by one of the other fats or oils such as canola.
Oil or lard you make yourself might be the only true way of knowing what you are getting.
For me, the main thing is to stay away from canola. It's really the only oil used here in Australia in food preparation and there doesn't appear to be anything good about it. It causes cell hardening resulting in various organ problems including heart conditions. It has a noxious odor which is bleached out with hexane - a carcinogen. It is made from rape seed which is poisonous. It is made to be resistant to Monsanto Round up which is used on it while growing and just after silo-ing.

The less processed by man the better I like it!

I'm always looking for a good olive oil. I've seen lists of well known brands that are found to be adulterated with all these bad oils. Doesn't leave much to choose from.
Maybe 2 year ago a new virgin olive oil appears. It carries the name of a very well known family of market gardeners here in my city. They built up a huge business supplying fresh vegetables to the city. Good reputation.
That oil was the sweetest lightest olive oil I had ever tasted. It was not always available. You had to be fortunate to see it on the shelves and grab some. 2 years later it has the taste color and consistency of all the other main stream brands. It's clearly being blended down now. I wondered what happened. I figured they outsourced production or something. Just supply their olives into the supply chain and buy oil produced by the processors in return. Real shame.
I just want some land. Then I would grow olives for oil. From what I've seen olive trees are prolific fruit producers and a small number of trees would provide all the oil I would ever need.

Bacon and eggs, for breakfast. You cook your bacon first, then use the greased bacon fat pan to cook up the eggs. Can't screw that up, comes out great every time.

Cept fot the nitrates and nitrites, They have unprocessed bacon now on the shelves too, about a buck more. Avoid the former, the latter is healthier as far as hot fried foods.

Animal fats and other natural largely saturated fats are much better than polyunsaturated fats and transfats vis-a-vis cardiovascular disease. However, animal fats and natural dairy are reasonably healthy IF ideal body weight ( and therefore caloric intake) is maintained. Once we get fat, regardless of what we eat, increases the risk of developing heart disease, cancer, diabetes and chronic degenerative diseases. I have been studying nutrition in health and medicine, a side hobby, for 40 years now. I consider my personal nutrition database a work in progress. That said, and speaking not as a professional offering health advice, I would also point that long term consumption of beef, other animal meats and dairy is closely correlated with the development of arteriosclerotic cardiovascular disease. So I personally eat animal meats sparingly but I do eat them - a compromise. I don't drink milk - I stopped that at age 2! But I do consume some cheese and other incidental dairy - but I keep my dairy intake minimal.
If you do just one other thing to promote good health and ward off disease, in addition to the general guidance offered above, you should supplment with vitamin C, a lot of it. The medical literature is replete with controlled studies and case histories indicating that Vitamin C, at sufficient dosages, is virocidal, bacteriocidal, anti-inflammatory, anti-histaminic, anti-oxidant (the premier antioxidant in living biology) and anti-tumor. There are many case reports of polio, viral encephalitis, septicemia, and metastatic cancer cured by high dose IV sodium ascorbate. I am fortunate to be well versed in the biochemistry of Vitamin C and it's remarkable borad range benefits make perfect sense because Vitamin C is an essential cofactor in hundreds of cellular reactions, over and above its role in collagen biosynthesis. Vitamin C is not a vitamin - it is a highly dense food. It should be consumed in grams, not milligrams. I take 3-4 grams a day, as divided 500 mg doses. If I feel stressed or illness coming on, I'll take an oral bolus of 2 grams. I have missed one day of work in 25 years. I can't honestly remember when I last had flu. I might get a cold a year if that. In short, I feel very well and stable on C.
A nice side benefit of Vitamin C is that it helps regulate blood glucose and totally eliminates sugar cravings when blood levels are maintained through dosing throuhout the day. Vitamin C can be used by the brain as fuel in lieu of glucose - interesting. FYI, almost all animals manufacture natural ascorbate from....glucose! Man (and simians, fruit bats and guinea pigs) all lack one key enzyme and cannot make natural vitamin C. Note that diabetes is non-existent in animals. And if we made our own C the way animals like cats and dogs do, we would manufacture about 2-5 grams in 24 hours, every day. And in times of stress or injury, animals ramp up C production 4-5 fold. Finally, high dose oral vitamin C will aid in weight reduction.

We go through lots of butter. You can keep a stick of butter at room temperature for up to 30 days without it spoiling, using one of those crocks that keeps a water seal around the butter. Much more spreadable and easy to use.

I take twenty grams a day of vitamin C and have taken as high as forty. Your bowel tolerance is the limiting factor. I also take other supplements that are recommended to stop and reverse heart disease.
Stopping and reversing heart disease with high dose vitamin C and lysine is known as the pauling therapy.

Agreed 100% I take between 10-15 grams of Vitamin C a day. My first year of taking such high doses of Vitamin C I noticed a huge improvement in circulation as well as breathing during running. I also regrew my L4 spinal disk that was thinning on a previous X-Ray. (Vitamin C is the basic requirement for collagen which is used to create and repair cartilage)
I also eat plenty of saturated fats. I eat about 3 eggs a day. You notice a huge boost in your testosterone when exercising (weight lifting) when eating that much cholesterol. Cholesterol is used by the body to make all of your hormones you absolutely cannot function without it..

Good deal Tumbleweed. That's the reason I started with high dose vitamin C as well. Heart disease runs in my family. It was a video on YouTube of this older gentleman who had 4-5 heart surgeries during the course of his long life that convinced me. He held up some of his own medical diagnostics over the years, and after his 4th bypass surgery he showed another artery was 75% blocked. He started the Pauling Therapy (and nothing else) and within 6 months his artery went from 75% blocked to 80% clear.

As you probably know, there is no linkage between dietary cholesterol intake and serum blood levels. Further, cholesterol is not the villain here. Rather the body uses cholesterol to repair arteries as an emergency measure until a permanent repair can be made. Vitamin C is essential to the permanent repair and resorption of the plaque.
