I can think of much easier ways of deleting data in a way that would draw a whole lot less attention. This theory is bullshit

Insurance. Remember their foundation funds are supposed to be blocked. Perhaps they don't have cash on hand, which in their position could very much be possible.

OK, so they set a fire to collect on insurance. Why burn the computers? Computer hardware is worth chump change these days.
