I was in a Mexican cafe/grocery store having lunch the other day. I glanced over to the meat counter and found drumsticks were priced at $.89 a pound. Seemed reasonable. Then I noticed that chicken feet were priced at $1.99 a pound. Just in case some of you are city folks here is a picture of half of a chicken feet.

The idea that there is more nutrition in a chicken foot than in a drumstick is a new one. You might notice that there is darned little meat on them but evidently you throw a pound to two in boiling water for 10 minutes, blanch them with cold water, pick off the skin and maybe trim the nails (the skin leaves a funky taste), then boil them again for 2-3 hours and you have a broth full of collagen that can be used to make soup.

Also, evidently dogs love them too. A dog treat is available at $.50 per foot. Maybe feed 'em to the dog once you have made your stock?
