Hi everyone I hope some will try to answer my question here. I have bought a guitar 2 years ago but I didn't mind it's brand or what, I just saw it as if it was a LOVE AT FIRST SIGHT, but this time around I want to consider how to choose, so can anyone please tell me what to consider or to do? thanks

Wild ales, sours, and the barrel-aged varieties of both are getting pretty popular. Also, kombucha, while not a beer, is something everyone should be drinking.
Also, given the explosion in new hop varieties available, look for breweries that are doing beers with the newest stuff - mostly gonna be IPAs but not always.

Kombucha... Grabbed a bottle last week, never tried it before. Had half and gave it to my son, he put it in the fridge never to be drank again. The next morning I realized why I never tried it before and wont again.

It goes flat if you open it and don't finish it at one time. No wonder you didn't like it when you tried it the following day. I will still drink it when flat, it's still active, just not as tasty.
It's definitely good for you. I suggest you find a flavor you like. My favorite is blueberry in a locally made brand. Before the 'authorities' got involved the commercially made kombucha would ferment on the shelf and it was excellent. Someone complained about the miniscule amount of alcohol in it from fermenting on the shelf and the 'authorities' put a stop to that.

It may have that effect at first, but it's temporary, and just means it's working of course. Flavors are endless... I suggest finding something local like MR said; local breweries are even adding it to their lineups in some places. Naturally occurring alcohol is around 1% in traditional kombucha, less if being sold at the supermarket generally.

I would probably tolerate it more if it was 10% alcohol, could blame the after effects on it.

BoochCraft in SD makes "kombuchas" that are 7%... i put it in quotes because although the Lactobacillus can survive at that ABV, many of the other useful bugs native to kombucha get killed off, which sort of defeats the purpose IMO. I'm not sure what the state of some of the organic acids produced becomes at high ABV. White Labs in SD started producing and selling kombucha SCOBYs a while back. They would be the ones to consult about the advanced chemistry aspects.
